Very Berry Lemon Trifle


1 package Iveta Lemon Scone Mix

4 cups seasonal berries

8 oz. Hurley Farms Lemon Curd

1 cup heavy whipping cream

8 oz. whipped cream (homemade or from can)

8-10 clear serving glasses


  1. Preheat oven to 350°
  2. To make the dough, follow the instructions on the scone mix package 
  3. Use the serving glasses to cookie cutter dough circles
  4. Place dough on greased baking pan and sprinkle with sugar
  5. Bake for 10-15 minutes
  6. Let cool, then cut scones horizontally in half
  7. Layer serving glasses: 1 slice scone, lemon curd, berries, whipped cream . . . repeat layers and fill to top of glass
  8. Garnish with fresh berries and fresh mint leaves
  9. Refrigerate or serve and enjoy

Yield: 8-10 servings
